Cinnamon Sugar Baked Oatmeal

INGREDIENTS:
2 massive eggs
One medium banana — smashed (about 1/2 cup)
1/4 cup refined sugar — packed
One tablespoon vanilla extract
Two 1/2 teaspoons cinnamon — divided
1/2 teaspoon salt
Two teaspoons leavening
Three cups quaint oats
One cup milk — cow's milk or non-dairy
One tablespoon refined sugar
INSTRUCTIONS:
Preheat oven to 350°F. Spray an 11x7 or a 9x13 pan with slippy cooking spray.
Whisk eggs, mashed banana, sugar, and vanilla till swish. Stir in two teaspoons cinnamon, salt, and leaven. Stir in oats and milk. Unfold in ready pan.
Stir one tablespoon refined sugar and remaining 1/2 teaspoon cinnamon. Sprinkle over unbaked oatmeal. Bake for 28-34 minutes till oatmeal is bronzed and not jiggly within the center. Cool slightly before serving. Serve with sirup and/or fruit or vanilla yogurt.
